When we asked Puritan and Co.’s chef-owner Will Gilson for some easy, comforting recipes to make at home during quarantine, he did not disappoint. The fact that Gilson—who turns out six-course seasonal menus on the regular—sanctioned a recipe with American cheese makes us feel a bit better about our lockdown life choices. So, stock up on your Kraft slices and make yourself these chef-approved sliders.
Makes 8 sliders
Ingredients
Burgers
1 pound ground beef
2 teaspoons Montreal steak seasoning
Assembly
1 pound sliced rare roast beef
8 dinner rolls, split
8 slices American cheese
¼ cup mayonnaise
¼ cup barbeque sauce
¼ cup (4 tablespoons or ½ stick) butter
Instructions
► Combine beef and steak seasoning in a medium bowl, mixing lightly but thoroughly. Shape into 8 half-inch-thick patties roughly the size of your dinner rolls.
► In a large nonstick skillet, cook burgers over medium heat for 3 to 4 minutes on each side or until a thermometer inserted into the center reads 160° Fahrenheit. Remove burgers from the pan and set aside on a baking sheet.
► Add butter to pan and toast the buns (flat side down) in the pan until crispy and golden brown.
► Place bottom buns down, top each with a spoonful of mayo, then with a burger patty, then with a few slices of roast beef, followed by barbeque sauce and, finally, a slice of American cheese. Place the top buns on top and secure each slider with a frilled toothpick.
